Hi everybody -
A friend hooked me up with this a few years ago and they are always a hit when I make them.
What you'll need:
Medium shrimp, fresh or frozen
Lemons (one or two should be enough)
Butter or butter substitute that melts well
Tony Chachere's Cajun seasoning
Bamboo skewers
Ice cold Corona (optional)
Get enough medium shrimp (I usually get the frozen Contessa ez peel ones) to make about three skewers a person. I use bamboo skewers. Thaw the shrimp and skewer them about 6 to 8 per skewer. Squeeze the lemons liberally over the shrimp, don't be bashful. Melt the butter and brush both sides of the shrimp. Sprinkle the seasoning on one side. You can go light or heavy, depending on your taste. Put the shrimp on the grill seasoning side down and sprinkle seasoning on the other side. Two or three minutes a side is all you will need on med/high heat. Maybe a bit longer if the shrimp are fresh but don't overdue it.
