This is GREAT cooked on the grill!!
1 package pork tenderloins-sliced into 1 inch medallions
Marinade-
1/3 cup olive oil
2/3 cup balsamic vinegar
juice of 1 lime or lemon
1 pouch Good Seasons Garlic Herb salad dressing mix-any other non-creamy flavor of Good Seasons dressing can be substituted
Mix the marinade well and pour over sliced pork in a zipper-type bag.
Marinate at least 4 hours-preferably over night. The longer the pork marinates, the the more intense the flavor will be.
Cook in med/high grill till tender and done. About 5 minutes per side.
Note-the pork may be SLIGHTLY pink inside, but it won't be under-cooked due to the marination speeding the cooking process.
Note-if you pour the left-over marinade into a glass jar and refrigerate it, it can be reused.
