Okay, I am a vegetarian, but I have to cook for my Mom, so I am wearing out my crock pot. 
I made this up based on a few other recipes sort of blended. It smells good and I am told it tastes great!
1 Bag of frozen veggies (your choice. I used Normandy blend)
1 32 oz carton of free range Chicken broth (low sodium for her)
1 cup white wine
1/2-1 cup lemon juice
1 Cup wild and long grain rice and seasoning blend (I used Gulf Pacific Gourmet Garden Harvest Flavor Blend that has rice, dried veggies and seasoning, but any would do.)
1 teaspoon black pepper
Frozen chicken breasts or chicken tenders
Water
Dump the veggies in the crock pot. Dump the rice blend in the crock pot. Pile frozen chicken into the crock pot until you can just get the lid on. Sprinkle the pepper on the top of the chicken pile. Pour in the lemon juice, the white wine, and the whole carton of chicken broth, then add water until the liquid line is about 1/4 from the top of the pot, or you can add water as it cooks, but the veggies and rice will absorb the liquid as it cooks. Turn the pot on low and cook for about 8-10 hours.
Makes about 6-8 meals. I am told it tastes great, but if anyone has suggestions to make it even better, feel free to post them!
