For when you don't want to cook but you don't want to order delivery

1 skillet, 1 bowl, minimal real cooking time

A couple tbsp olive oil in a large cast iron skillet medium heat
Chop up 1 onion, put it in the skillet
Put in 4 cups frozen mixed vegetables on top of onion
1 qt canned chicken, or frozen cooked chicken from the deep freeze on top of veggies
Cook on medium heat until onions look tender. Start preheating oven to 400
Mix 2 pkg country gravy with 4 c water, pour over veggies and chicken, stir until thickened.
Using bowl you just used to mix gravy, make drop biscuit dough and drop spoonfuls over mixture
Put skillet in heated oven, cook until biscuit topping is getting browned.

Thanks Lucille, always looking for fast and simple meals.

Here is another easy meal and I just made it tonight. Wife had set out some veal cutlets for dinner but she fell ill and went to bed. I put veal in fridge and made my easy peasy Turkey Chili

Brown package of ground turkey. 2 cans of Best Bean mild chili, 2 jars of Black bean and Corn Salsa and a 16 ounce can of diced tomato.

Bring to boil then simmer with lid on for 1 hour. Turn off stove and let it slowly cool to eating temp. I think this is when the flavor mixes together.
