Sure!

Axanthic means a lack of yellow pigment. So, if you take a green iguana and take out the yellow, the color that's left is blue.

I haven't heard of a anerythristic green iguana before, but in snakes the animal tends to be black and white. Leucistic would be a lack of all skin pigments, although eye pigment would still remain, giving you an animal that is all (or mostly) white with dark eyes.
