Last 4-5yrs we have only eaten wild pig meat,it cheap and far superior to any cut found in a market.
We control the (bacon) flavor during the cure/smoke and its wicked tasty.
If there was a down side it would have to be the leanness of the meat,wild pigs dont get much fat on them unless the domestic gene is expressed at higher percentages

I would imagine that our government truly envies the control that the Chinese government has over it's people.

It does give them the confidence,"it can be done"
