Crock pot.

Two to three pounds of meat, such as chicken breasts, or a small pork or beef roast.

One 16 oz jar of pepperoncini.

Put meat in crock pot. Pour contents of jar (juice and all) into crock pot.

Cook on low 8 hours.

Shred meat, put on buns, and top with provolone cheese.

Leftovers make a great lunch the next day.

I cook in batches a lot of the time. I have a big freezer, and just learned to can. That way, you can go buy all the ingredients for something that will take hours to prepare (like lasagna) (you can only freeze lasagna not can), or smoking a brisket, and next time you want some lasagna or something from one of the other batches or don't feel like cooking, you have dinner ready with only a couple minutes in the microwave.

Is a 7-quart crock pot large enough to feed six to seven adults?

For breakfast, or anytime!

I've been making this breakfast casserole for many years. Serves 5-6, and it freezes and microwaves beautifully!

HASH BROWN CASSEROLE

6 eggs
1 Can (12 oz.) evaporated milk
1 tsp. Salt
1/2 tsp. ground black pepper
1 package (30 oz.) frozen shredded hash brown potatoes
2 cups (8 oz.) shredded cheddar cheese
1 medium onion, chopped
1 small green pepper, chopped
1 cup cubed ham

Preheat oven to 350. Grease a 13 x 9 baking dish. Beat eggs in large bowl until well-blended. Stir in evaporated milk, salt, and pepper. Add potatoes, cheese, onion, green pepper, and ham; mix well. Pour mixture into prepared baking dish. Bake, uncovered, for 60-65 minutes, or until set.

Really tasty on a chilly morning, with toast and coffee!

I would think so. I have that size and can really fill it up for the family dinner and have enough left over for at least another dinner plus a work lunch or two.

If you use more than 3 pounds of meat in that recipe add more of the pepperoncini.

With the veal marsala, if you're going to substitute for the veal, go with a boneless pork chop cut thin and then pounded out thinner. Will be even cheaper than beef and much closer and honestly should be better for you as well if you use the lower fat loin chops.
