Trust me, I would rather be doing more interesting things with my time, and wouldn't be making this effort if I didn't think it was worthwhile.

Wild Rice Recipes Please
I am looking for some good recipes for wild rice.
Keep in mind we are on a diet (calorie counting) so nothing TOO good tasting. LOL
So please, let me hear what you have in mind

I like this Wild Rice Casserole recipe:
Ingredients
1 cup uncooked brown rice
1/2 cup uncooked wild rice
1 red bell pepper, chopped
1 green bell pepper, chopped
1 zucchini, sliced
1 carrot, sliced
1 celery, sliced
1 teaspoon garlic powder
1 teaspoon onion powder
1 cube vegetable bouillon
2 tablespoons margarine
2 cups water
salt and pepper to taste
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Rinse the brown and wild rice; pour into a 2 quart casserole dish. To the rice add red bell pepper, green bell pepper, zucchini, carrot and celery. Stir in garlic powder, onion powder, vegetable bouillon and margarine. Mix well, pour water over mixture, and cover.
3. Bake in preheated oven for 30 minutes; check at this point to see if more water needs to be added. Bake for 15 to 30 minutes more, or until rice is cooked. Stir well before serving and season with salt and pepper.

ooooh, that sounds good Brandi! And my man will like to see that it has no meat.. If he had his way, he would go vegetarian.. And if I had MY way.. I would be a Meat-a-tarian :P

Dang, you women actually cook? My wife is happy I am Japanese and throws my rice in the cooker and voila... Rice! If I want "wild rice", she gives me some seaweed. To think, she WHITE too
