Banana Bacon French Toast

Made this for Grandchildren this morning. I way over estimated for 3 kids, 2 adults so my 2 Boxers enjoyed a snack also and loved it!



1 ea. Large egg, beaten
1 cup Milk
1 tsp. Vanilla extract
1/2 tsp. Cinnamon, ground
1/2 tsp. Salt
2 slices Brioche or challah bread, thick sliced
2 Tbsp. Butter, unsalted
1/2 cup Banana, fresh sliced
1 cup Maple syrup
3 slices Smithfield Naturally Smoked Applewood Bacon, cooked
1 Tbsp. Pecans, crushed
2 Tbsp. Fresh mixed berries (or berry of choice)


Combine beaten eggs, milk, vanilla extract, cinnamon, and salt in a large bowl, mix well. Dip sliced bread into batter and let it soak up the mixture for 2 minutes.

In a medium sauté pan, over medium high heat, add 1 tablespoon of unsalted butter and melt. Add sliced bananas and sauté until lightly browned, approximately 3 minutes. Add maple syrup and simmer for 1 minute then set aside.

In a large sauté pan add 1 tablespoon of unsalted butter and melt over medium high heat. Add batter dipped bread and sauté each side until golden brown, flip and repeat. Make sure toast is completely cooked through and the center is not soggy.

On a plate, top one piece of toast with sautéed bananas, slices of Smithfield Bacon and any remaining maple syrup. Place remaining slice of toast on top followed by a sprinkle of toasted pecans and mixed berries.

Oh I used Texas toast instead of brioche or challah bread

Thanks Mark but pic is not mine. Mine looked very edible though just not as pretty, lol. About 25 years ago I made a 5 fruit cheesecake that looked better than what it did in cookbook. Wish I had taken a pic then. Damn thing cost a fortune to make though.

Man im sure it taste just as good as the pic looks! Fruit cheesecake is deff not on the top of my list lol andit does take a lot of money to make something good!
