Ok....how's about N.E. Clam Chowda?

Any recipes? I love the stuff, and want to cook up a vat or 2 for the winter. FYI, all references to the chowda should be made using the correct spelling. To call chowda anything but "chowda" would be unacceptable, as would submitting a recipe for a bland, watery soup....it's CHOWDA!!!!

I eyeball everything but here is an guesstimate of how I do it. Feel free to add or sub out whatever suits you.
OK here is what I do:
4-5 medium to large sized potatoes (red is my favorite) washed and diced
1 onion diced
1 garlic clove minced
2 celery stalks sliced
1 can of baby clams do not drain
1 cup milk or 1/2 cup half and half or cream
1 tbsp butter
1 can chicken broth
2 tbs flour
salt and pepper to taste

In a large pot boil potatoes, drain and return to pot. Slightly mash potatoes. Best if skin left on. Add chicken broth, and milk or cream. Cook on med heat while adding onion, celery, and garlic. Stir in clam juice, and flour. Flour must be added while everything is hot or it tends to clump. Add butter and clams and allow to cook until soup thickens to your liking. Salt and pepper to taste. Serve hot with or without oyster crackers.
