Chopped liver

1 lb chicken livers
1 medium onion
oil for frying
3 hard boiled eggs

Wash the chicken livers and remove any fat or membranes. Fry in about 1/2 cup oil (or chicken fat if you have it) until middles are not pink and set aside.
In same fry pan, chop up the onion and fry until golden
Take shell off eggs
Put eggs, onion, liver, salt and pepper in food processor and chop medium, not fine like a pate.
Chill and serve with crackers.
