But Pairing should start in December then? That is what I am concerned about, is when I put them together, when I should start looking for gravid females.

I had a 100% success rate in getting eggs for my first year by doing this (but everyone is different with their ways of doing it):

October 1st - lower temps to 78 at night
Nov 1st - Start introducing males to females cage and leave 2 days in until I see a full lock for at least 1-3 hours or more. Then I let the males rest for 3 days and repeat.

I saw my females ovulate around February/March and I got eggs in June/July. Hope this helps! :-D

This was my first year breeding and I went 3 for 3. I didnt lower temps and I started introducing in November with the females that I thought were fit to do so. All eggs have been laid and already have hatch. My last clutch just hatched a few weeks ago (from a later pairing). I just let them do their thing!

no set rules on when they will/should eat, if theyl eat (male or female) let em eat; its frustrating enough when they do go off. the cooling isnt necessary but i believe dropping down a few degrees in ambient going into late oct-nov and on through to maybe jan-feb and also doing a night drop to a few degrees cooler can be beneficial for breeding and follicle development.

Thank you very much everyone! I make it harder than it should be, but I guess that's because i'm new. haha

I will let you all know how it goes based on the methods you've given me!

If you have anymore tips to add feel free!
