Since crocodilians are carnivorous, they're really not interested in the plants for food, so ingestion isn't much of a concern. They enjoy water lettuce, duckweed and hyacynth as hide cover, so those are fine as enrichment elements in your caiman's habitat. Keep in mind that those plant items make enclosure maintenence more of a hassle becasue they tend to break apart, sometimes into very small pieces, so you could opt for some of the commercially-available artificial "planted" and floating plants for ease.
As for planted real or artificial plants, the caiman will likely uproot them during its movement after a while, so perhaps and artificial plant that is attached to an artificial log or something similar would be best to keep it in place.
