3 medium potatoes
2 eggs
1/2 cup flour
1/2 cup chopped onion
salt
oil for frying
Peel the potatoes and grate them into a bowl. Meanwhile, start oil heating in a cast iron skillet, about 1/2 inch, on medium heat
add the onion, flour and eggs to the grated potatoes and then salt to taste. Drop by spoonfuls into the hot oil, flattening each latke with the back of your spoon.
Fry until dark golden brown and crisp, turn and fry the other side, then set on paper towels while you fry the rest.
Serve hot with plenty of sour cream.
