I've never been a big fan of Spam, but a while back I saw some on sale and figured it would be a good emergency food so I bought some.
Yesterday I made a breakfast casserole with one of the cans I had bought. I did not have high hopes, but it turned out to be not bad.
Storing food is a good idea, but knowing how to make the stored food palatable is also good.

Preheat oven to 350

6 potatoes, around 3"x6" each
8 eggs
6 slices American cheese
1 medium onion
2 green sweet peppers
1 large jalapeño, preferably left on the plant until it turns red
1 can Spam

Peel potatoes and cut into 1" cubes. Boil until a fork easily goes into the cubes
Drain and put into a casserole dish.

Chop onions, peppers, jalapeño. Cut Spam into 1/2" cubes. Fry onions, peppers and Spam in a little butter or margarine until veggies are tender. Add eggs and stir mixture until eggs are just cooked but not dry. Put mixture in casserole dish dish and gently mix in with the potato cubes. Put the cheese on top and bake for around 20 minutes.

Spam is fine eating once you get creative with its versatility
Cubes or slices slow simmered in plain water help render out alot of the salt and grease(like poaching bacon,pork belly etc)

1/2" squared cubes make great corndog bites (favorites here)
