Normal breeding triangle works well: 1 male 2 females, but I think 3 females would be OK too. Breeding happens pretty easily with mice, but it works best if you house the male apart from the females, drop him in for breeding visits and remove him while they give birth.

If they get overcrowded they are prone to eating their young, so I think I'd go for at least 2 cages - you could cycle the male through the females so that you have him breeding one while the other(s) give birth.
