They can certainly take two days to fully hatch, but it could also be much quicker. The main issue with them hatching and staying in the incubator is the potential damage to the other eggs. You could have someone check once per day. When I have to leave eggs that are ready to hatch, I put them each in their own container on slightly damp peat substrate. They only need enough room to move around a little bit. You can put a desk lamp over them for heat, but get the temperature very stabilized and thoroughly tested before you do this! Tortoises will be fine for 2 days without food or water. In fact, they are still being nourished by the yolk sac at the beginning. Now, if you leave for a week, that's a different story. Then you need a petsitter.
