Replying to the email just wastes your time as it goes NOWHERE, and probably pisses off the person you thought you replied to when they think you just ignored them. So instead of complaining to me about your messages not being replied to from this site via email, please READ that email notice that plainly states what you need to do in order to reply to who you are trying to converse with.

    Google Adsense ad revenue for December, 2025 was just $30 over the cost of the lease for the server running this site. So, in effect, the money providing the incentive for me to continue running this site is coming SOLELY from the paid memberships and sponsorships here. Which honestly ain't much....

ARTICHOKE LEMON & GARLIC CHICKEN

Made this the other day. Wanted something that made chicken the background of the meal as I'm getting tired of chicken! This worked. Tasted good after cooking but after letting sit overnight it tasted even better.

Ingredients
4 boneless, skinless chicken breasts
2 lemons, thinly sliced
8 cloves garlic, crushed and peeled
1/2 teaspoon salt
1/4 teaspoon lemon pepper
1 (12 ounce) jar artichoke hearts in olive oil
1 cup cherry tomatoes
3-4 sprigs fresh thyme

Instructions
Preheat the oven to 375 degrees. Lightly spray/oil the bottom of a 9x13 baking dish. Lay 4-6 slices of lemon on the bottom of the dish. Place the chicken on top and season both sides with salt and lemon pepper.
Sprinkle the crushed garlic cloves on and around the chicken. Add the artichokes, tomatoes, thyme and remaining lemon slices on top.

Bake for 40-45 minutes until chicken is cooked through. If you want that extra brown color on top, you can broil for 2-3 minutes at the end. Let rest for 5-10 minutes then serve!
