Retorting (cooking it in the can) has been debated since the early 90's, some say it is not 100% sterile since it is cooked in the can and 100% of bacteria cannot be killed (hence the 3-7 day use after opening) and it loses some nutrition while others say it does kill all bacteria since bacteria needs air and space to breed (hence the 3-7 day use after opeing) and it is a natural way to preserve all nutrition.
So its probably another one of those half dozen of this and 6 of another.
A leo will certainly not die if you cannot get live feeders in 1-2 days, really much longer but what is worse:
Feeding at least partially nutricious canned food
or
ungutloded insects
For someone that only has a couple of leos or herps they may find the canned food to be a better alternative. Haven't tried any of it yet much less know any of what long term canned food would do to a reptile but I do know that long term non gutloaded food is very harmful.
