NOW I remember why I was considering moving to Wisconsin. Texas in August is just unbelievable.
So sometimes when it is that hot outside, you want a nice refreshing cold meal. The way I make pasta salad is I look for leftover frozen veggies in the freezer from when I didn't use a whole bag making another meal. This time I found a half bag of stir fry veggies with the peapods and all.
BTW, having those little bags of frozen chopped onions and peppers on hand is a good idea for lots of recipes.
!/2 pkg frozen veggies
1/2 bag of garden rotini pasta
1/2 cup frozen chopped onion
1/2 cup frozen chopped peppers
1/3 can of dice tomatoes or rotel
Lite Ranch Dressing
Cook the frozen veggies and pasta in boiling water until pasta is al dente
Put in colander, it needs to drain really well so the ranch dressing doesn't get runny. Run cold water over the veggies and pasta to cool them down and drain some more.
In a bowl put the frozen onions, peppers and drained tomatoes. Add the drained veggies and pasta. Put a bunch of Lite Ranch on top and gently stir in. Chill in refrigerator for about an hour. (The salad, not you).
Serve in bowls with bacon bits on top, and a piece of French bread, and a cold beverage.
