Replying to the email just wastes your time as it goes NOWHERE, and probably pisses off the person you thought you replied to when they think you just ignored them. So instead of complaining to me about your messages not being replied to from this site via email, please READ that email notice that plainly states what you need to do in order to reply to who you are trying to converse with.

    Google Adsense ad revenue for December, 2025 was just $30 over the cost of the lease for the server running this site. So, in effect, the money providing the incentive for me to continue running this site is coming SOLELY from the paid memberships and sponsorships here. Which honestly ain't much....

Super Easy Swedish Meatball & Mashed Potatoes

Made this tonight and I'm stuffed. Great for today's wet and cool weather.

Bought a big packet of frozen Swedish Meatballs from BJ's wholesale.

25 to 30 Frozen Meatballs or fresh meatballs
6 tbsp butter
1/3 cup flour
3 1/2 cups beef broth
3/4 cup sour cream
Salt and pepper to taste
1 tbsp finely minced parsley, divided



If you're using frozen meatballs, place them on a microwave safe dish in a single layer and microwave for 1 minute. Turn them over and microwave for one more minute. Set aside. If using freshly made meatballs just set them aside for now.

In a large pan melt the butter over medium heat. Once it's melted gradually whisk in the flour until it's thick and somewhat crumbly.

Slowly pour in the beef broth while whisking constantly until it's all added. Cook over medium heat, stirring constantly for 1 to 2 minutes.

Add in the sour cream and whisk to combine. Season with salt, pepper and half of the parsley.

Add the meatballs to the gravy and reduce heat to a simmer. Let simmer for 5 minutes, or until meatballs are heated through.

Serve meatballs over warm mashed potatoes and garnish with the extra parsley.
