    In short, DON'T! Email notices are to ONLY alert you of a reply to your private message or your ad on this site. Replying to the email just wastes your time as it goes NOWHERE, and probably pisses off the person you thought you replied to when they think you just ignored them. So instead of complaining to me about your messages not being replied to from this site via email, please READ that email notice that plainly states what you need to do in order to reply to who you are trying to converse with.

    Google Adsense ad revenue for December, 2025 was just $30 over the cost of the lease for the server running this site. So, in effect, the money providing the incentive for me to continue running this site is coming SOLELY from the paid memberships and sponsorships here. Which honestly ain't much....

Blue Cheese Stuffed Chicken Breasts

2 tsp. olive oil
1/2 lb. button mushrooms, finely chopped
1 shallot, finely chopped
1/2 tsp salt
1/4 tsp. black pepper
2 tbsp. dry sherry
1/3 cup crumbled bleu cheese
1 lb. boneless skinless chicken breast
1/2 cup low sodium chicken broth

1. Heat 1 tsp oil in skillet, add mushrooms, shallot,1/4 tsp. salt, and 1/8 tsp. pepper. Cook until browned, 4 to 5 minutes. Add sherry and cook until evaporated. Remove from heat, cool 10 minutes and add cheese.

2. Cut horizonal slit in each chicken breast. Fill each with 2 tbsp. filling. Close with toothpick. Sprinkle with remaining salt and pepper and brown in skillet in 1 tsp oil.

3. Transfer to crockpot. Add broth to skillet. Cook stirring to scrape the brown bits from the bottom. Add to crockpot, cover, cook 2-3 hours on high or 4-6 on low. 4 servings.

4. Per serving: 1 breast half + 2 1/ tbsp. broth.

Per Serving (excluding unknown items): 215 Calories; 7g Fat (31.2% calories from fat); 31g Protein; 4g Carbohydrate; 1g Dietary Fiber; 74mg Cholesterol; 565mg Sodium. Exchanges: 0 Grain(Starch); 4 Lean Meat; 1/2 Vegetable; 1 Fat.
