I prefer butter over margarine. I keep my butter in the freezer with 1 stick at a time in the refrigerator. If I want to butter bread or do something else where I want the butter to be soft, I use the microwave (2 pats of butter, 13 seconds).

Recently I came across a thread elsewhere, where some people said they just kept their butter room temperature on the counter and it would stay good for weeks. I had not heard of doing this before I read about it.
Does anyone here just keep your butter out without refrigerating it?

We don't keep our butter out all the time, but if we are going to have something in a meal that requires butter, the little women will get a stick or two out of the refrigerator and set them out. It doesn't take them long to get to room temperature. After we eat, the left over butter goes back in the refrigerator.

We go through a stick of butter every five or six days. We keep our "working stick" in the unrefrigerated cabinet and all other supplies refrigerated. When we get more than halfway through our soft butter, we'll grab another stick from the refrigerator and put it with the working stick. If we hit Costco/Sams/etc. and get a "big box", we'll freeze some of it just to free up refrigerator space.

We buy fresh eggs from one of our friends with chickens and don't refrigerate them either. They are unrefrigerated when we get them and they will keep that way for up to 52 days from the date laid. Once they are refrigerated, they will spoil quickly when set back out. As long as they are not chilled, they remain in suspended animation pending incubation/being eaten/being refrigerated/52 days....whatever comes first.

I leave butter out no more than 5 days. Usually a stick only lasts 2 or 3 days. Light and heat can make it go rancid quicker but I usually maintain house 72 or lower.

I can remember the day my aunt would leave lard out on the counter to be reused several days in a row. We keep our butter in the fridge, we keep everything in the fridge. Fruit and vegetables, well not potatoes. For the most part I prefer everything cold. That way, there is no question (how long has this been out).
